Ingredients

  1. Chill a coupe with ice and set off to the side.

  4. Vigorously dry shake (w/o ice) to cook the egg white proteins and combine the cocktail.

  5. Add in ice and shake to cool the mixture.

  6. Remove ice from the coupe and strain the mixture into the glass.

Preparation

Dry-shaking is a technique that involves shaking ingredients such as egg whites and aquafaba without ice. This technique emulsifies the ingredients and creates a silky texture and frothy head. A second wet shake, with ice, chills and dilutes the drink.
